Annual Weigh-Down?

Our family has been chatting back-and-forth about doing the “required” annual Weigh-Down that we’ve been doing for years even though none of us seems to stick to even for one month. Like usual, I made a resolution to try to eat healthier and excercise more this year. So far I’ve been doing really well on the “eat healthier” goal, but am doing terrible with the “excercise” goal. Why do I hate that word soooo much?!

So, I was trying to catch up on everyone’s blogs today (which was really easy to do since most of you NEVER post anymore)…and saw on Aunt Cindy’s Blog that she is trying to lose weight and eat healthier because of a recent doctor’s visit. She also posted two low-fat recipes that look really super-yummy ~ I’m going to have to try them out sometime this week to see if the family will eat them or not. So, in the spirit of sharing, here is one low-fat recipe that my family (even the kids) LOVE to eat…it’s one that my mom made a lot when I was in high school and she and dad were on a health kick.

1) Defrost chicken and brown in a fry pan with Pam Spray.
2) Mix: 1 cup tomato juice, 1/3 cup finely chopped onion, 1 T. parsley, 1 1/2 tsp. salt, 1 tsp. basil, and 1/8 tsp. garlic powder (sometimes I double this mixture if I need a lot of sauce)
3) Pour tomato mixture over chicken. Cover and simmer on low for 50-60 minutes.
4) Serve with rice.

So, do any of you have any other low-fat recipes to share (preferably easy recipes)? You all know how I am about cooking…ugh.
